Head Chef Soane Fakatava is very focused on freshness and quality of the produce and ingredients. He uses and he loves to create a fusion of traditional Polynesian and European Haute Cuisine.

Chef Soane trained in Germany with Michelin starred Chefs and our guests love to taste his creations, a Polynesian blend of exotic ingredients. Our kitchen won the South Pacific Tourism “Culinary Award 2017/ 2018” and the “Best Cook Award” at the Heilala Festival for the King of Tonga.
