Head Chef Soane Fakatava is inspired by the freshness and quality of our local produce and ingredients. He loves to create a fusion of traditional Tongan food and European haute cuisine.

Chef Soane trained in Germany with Michelin-starred Chefs and our guests love his flavourful creations, a Polynesian blend of exotic ingredients. Our Seaview Restaurant kitchen team were thrilled to win the South Pacific Tourism “Culinary Award 2017/ 2018” and the “Best Cook Award” at the Heilala Festival for the King of Tonga.
